Bananna Butterscotch Cupcakes

"The Cupcake Deck" by Elinor Kilvans

1 1/4 C. flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
6 Tablespoons room temperature butter
1 cup sugar
2 medium bananas broken into 1 inch pieces
2 large eggs
1/2 teaspoon vanilla extract
1/4 cup buttermilk
1 cup butterscotch chips

Frosting:
1/4 cup half and half
3/4 cup packed light brown sugar
1/2 cup room temperature butter
1 cup powdered sugar
1/2 teaspoon vanilla

350' oven

Sift the flour, baking powder, baking soda and salt in medium bowl and set aside.

In a large bowl, using an electric mixer on medium, beat the butter and sugar until blended and creamy. Add the banana, and blend. Add the eggs, blend. Add vanilla and beat for 1 minute. Add half the flour mixture. Mix in buttermilk. Mix in remaining flour mixture until batter looks smooth. Stir in butterscotch chips.
Fill each paper cupcake liner and bake about 25 minutes. Let cool before icing.

Frosting:
In medium saucepan heat half and half and brown sugar over low heat until brown sugar melts. Increase the heat to medium high, bring to boil, and boil for 1 minute, stirring often. Pour into a small bowl and refrigerate about 45 minutes.

In large bowl, beat the butter and powdered sugar with an electric mixer on low speed until smoothly blended about 2 minutes. Add the vanilla and brown sugar and beat on medium until smooth and creamy

These cupcakes are absolutely AMAZING. I made these in little muffin tins, and Noah loves carrying around a little cupcake in his hand! I made a double batch of these, but they didn't last long! They were so yummy.

Have a fresh and fun day,
Lindsey

Fuzzy Loves

Fuzzy Loves Pet Day was such an amazing event! We had a lot of people show up, and raised a lot of funds for the Humane Society!
Local store owners contributed beautiful baskets that were a big hit at the drawing. Even I couldn't help sneaking a few chances in!
The calendar turned out absolutely georgeous! I'll be posting pictures as soon as possible of the whole event.

Have a fresh and fun day!

Fresh and Fun Creations for Kids

Peanut-Butter Granola Bars
(from Martha Stewart)

Makes 24
1/3 cup honey
1/4 cup natural peanut butter
2 Tbsp. unsalted butter
1 C. crisp rice cereal
1 C. old fashioned rolled oats
1/4 cup dried fruit (rasins/craisins)

In a small saucepan over medium, heat honey, peanut butter, and butter. Stir until loosened and smooth, 1 to 2 minutes. Remove from heat; stir in cereal, oats, and dried fruit.
Drop mixture by the tablespoon into mini paper cupcake or candy liners. Place on a rimmed baking sheet, and refrigerate until set, about 15 minutes. To store, refrigerate in an airtight container up to 1 week.

This recipe is great to make with kids. they can do all the stirring, and if is fun shaping the balls and placing them in cupcake papers. this is very simple to make and is a great snack for any age. They aren't too chewey either! My mom, brother, and son all loved them, and I served them as a healthy snack at a recent ladies night at D-dots. You can get cute cupcake wrappers to put them in too! They are great for parties, and they look cute. I also made this recipe a little different by adding shredded coconut, craisins and sliced almonds.

Fabulous Finds

My fabulous find this week wasn't a company, or a great deal. It was a skinny, meowing little kitty who just wanted to be held.
Lindsey and I were taking our usual trip to the Humane Society to photograph the animals. As we photographed this kitten, I just couldn't put him back down. He was so tiny, and loved to sleep in the warmth of my hand. I made a quick call to the cat hating husband, and to my everlasting surprise he said yes.

(If you're looking for a pet, go to the Montrose Humane Society. The adoption process was quick and easy and they sent me home with food and a little box for my baby.)

The kitten slept in my lap the whole way home where he met his doggie brother Riley, and my husband, James. Since James was nice enough to let me get the cat, I thought I would let him name it.
James' first suggestion was... Soda Pop? Lindsey vetoed that one quickly! James ended up naming the kitten Abraham Lincoln Warren. Quite a big name for a tiny kitty, so I've shortened it to Abe. Most of the time though, we refer to him as, "the Baby."

My husband probably would die of mortification if he knew I was revealing this, but last night I found him tucking Abe into bed with heating pad, Christmas lights for a night light, and complaining that he didn't get to see the "baby" all day.
Tiny kittens can soften even the hardest of cat hating hearts! I feel like James and Abe are going to end up as best buds.

To end the story of Little Abe, my fabulous find of this week was also fuzzy. =)

Which reminds me! Tomorrow is the BIG EVENT!!!

We will be offering 20% off of all D-dot merchandise with the purchase of a Fuzzy Loves Humane Society calendar tomorrow. The event is from 10am-4pm.

Animals from the Humane Society will be there for adoption, so come get a little kitty like Abe, or one of his brothers or sisters.

Tutus!

What is more adorable than little girls frolicking in the field? Little girls in tutus of course!! “Tutus in the Field” is one of my favorite Limited Edition Sessions. We have a great time in the luscious grass at my parent’s field, and take plenty of adorable and fluffy tutus for the little girls to try on. This limited edition is going to be held on Saturday, May 15th. There’s still some room for your little girl to sign up, so give me a call!

Have a fresh and fun day,

Lindsey

Cheddar Carrot Balls

4 oz cold cream cheese (1/2 bar)
2 oz grated cheddar cheese (1 cup)
1 carrot finely grated

In medium bowl combine cream cheese, cheddar cheese and carrot. With moistened hands gently form 12 balls. Serve or refrigerate, covered with plastic wrap up to 2 days

This was a very quick and easy recipe. It is a great way to sneak a veggie into a snack for kids. We spread it on what crackers, and it was very good! Noah liked it and I was happy to have a healthy snack he would eat.

Fuzzy Loves

On May 8th we are going to be having a fun and fuzzy event at D-dots Boutique! Our local Humane Society has done a great job taking care of and loving on homeless dogs and cats. If you know me, you know I love animals, and I decided to organize this event to do my part to help support the Humane Society.

I created a calendar using pictures of the dogs and cats from the shelter, as well as some of your dogs and cats! We will be selling the calendar on May 8th from 10-4, as well as having a ton of other fun activities available.

Bring your pet dressed up to see if it will win a free pet session in our “Best Dressed Pet Contest”. There’s going to be free cotton candy and a coloring contest for the kids.

Local groomers and vets have volunteered to provide pet bathing and nail clipping for a minimal donation which will go straight to the humane society!

I’m so excited about this event, and I hope to see you and your furry friends there!

Have a fresh and fun day,

Lindsey

Fresh and Fun Creations for Kids

Fabulous Fingerpaints! (Martha Stewart)

Homemade finger-paints are nontoxic, washable, and always available. Stir together 4 tablespoons of sugar and ½ cup cornstarch together; add 2 cups of cold water, and heat over medium heat until the mixture is thick (the mixture will thicken more as it cools) Divide into four or more containers, and add food coloring as desired.

This was so easy to make and so much fun! Noah and I loved painting together. IT took him a little while to get into it, but after a few minutes he dug his little hands right in. I love that it is made from all safe ingredients, so if they do get any in their mouth you don’t have to worry about it! Try this with kids of any age, and you will all have fun!

Have a fresh and fun day,

Lindsey
